on wed i made banana chocolate chip muffins. they are so good that i knew that i had to give them away or i would eat them all. i buy bananas and sometimes we are in the mood to eat them. if not, that's ok. that means i get to make muffins! i got this recipe from my aunt geep. geep is not really her name, it's karen, but i've always called her that. (it's a nickname that my parent came up with so long ago. you know back before i was even around) well, she got it out of taste of oregon cookbook. that always makes me think of banana slugs....
but back to the muffins. we had some bananas that needed to be put to use. i was happy to do something with them.
by the time the first dozen came out of the oven, it was sterling snack time. he ate 3 of them. he loves the chocolate chips. (can you tell?)
banana muffins with chocolate chips
1/2 c. butter
1 c. sugar
1 egg
1 t. baking soda, dissolved in 1 t. of cold water
1 1/2 c. flour
1 t. nutmeg
1 t. vanilla
1 c. mashed banana (about two large bananas)
chocolate chips, as many as you want. (i use about a cup)
cream butter and sugar. beat in the egg. add the baking soda, flour, nutmeg and vanilla until combinded. add the bananas. then add the chocolate chips. put batter in a greased muffin tin or use liners. you can also make loafs.
bake at 350 degrees for 20 mins. (they cook in about 14 mins here in montana, so start low and add more time if needed) this makes about 2 dozen muffins.
let cool, if you can before eating! enjoy!
you see, sterling has learned to push a chair up to the counter or stove to reach or see whatever is up there. on wed it was the sink.

yes, he is sucking on the wash cloth. he even wiped the front of himself. he got water all over the floor, but since he helped wipe that up too and then put the towels in the laundry... it's not so bad.
i was out in the garden once because i had gone out to do some burning. i heard sterling playing with (oh this happened on confrence saturday) with the pot that was on the stove. it was water in it. i'm not sure if the pasta was in it or not. but i heard him up there and i didn't know if andrew was watching him. i guessed not since he was on the couch and i hadn't heard him say anything so i hurried back to the house. i don't know how far it is, but it's not like out garden is just outside our back door. anyway, he was up there and andrew didn't hear him. he must of been really alseep or something. he didn't hurt himself.
he has become my cooking buddy. sometimes i don't mind, other times...well i push him outside to play with the cat. he gets all excited when the mixer is out on the counter too.
